Today’s cookie is a holiday classic with the sweetest little twist -Gluten-free Linzer Cookies!

These look fancy, but they’re surprisingly simple to make. They’re delicate, lightly nutty, and filled with jam that peeks through like tiny stained-glass windows.

I make these with buckwheat flour and almond meal, but they’re just as lovely with regular flour if that’s what you want to use. Either way, you get a tender cookie that feels festive the moment you sandwich it together.
